If the cake had a white icing, this revealed the fact that only the best and most expensive white sugar was being used. Brown sugar was much more common, and therefore much less expensive. The flavors of the cake also affect the time of ordering the cake. A sponge cake can only last for a few days and it should be prepared three to five days before the wedding reception. On the other hand, a fruit cake can last for a few months and it can be ordered say a month or two before the reception.

That cake is being outsourced to a baker skilled in the creation of wedding cakes, then its being brought to your wedding and added to your bill with a nice profit markup for the reception hall. There is almost no instance when it makes sense to order this cake over one you can get direct from a baker.
